15 Seasonal Sips For Winter

As winter approaches, tropical fruits, rosés and lighter beers move over for robust reds, fuller whites, apples, cinnamon and warming drinks. Here are 15 craft beers, cocktails and wines to enjoy this season.

1. Pietra 

An intriguing Corsican amber beer with sweet chestnut flavours, this tipple is a nice one for winter as it also has a touch of spice and citrus. These spices, combined with nuttiness and surprising caramel hints, makes Pietra a unique and light choice for that first drink on a cold evening.

Cocktails featuring spices will be everywhere next season and drinking them hot is one of the best ways to enjoy them. Spiced Apple Grog contains Jameson, Highbank Drivers Cider (N/A, GF and organic), cinnamon shavings and “Ireland’s answer to maple syrup”, Highbank organic orchard syrup. 3. John Duval “Plexus” Shiraz Grenache Mourvedre

Winter calls for something warming and decadent and this wine, from the Barossa Valley in Australia, delivers on both counts. Velvety smooth, spicy and lush, think of a glass of this as a hot-water bottle for the soul.


4. Cloughmore Dark Water Stout

Cloughmore Dark Water Stout is brewed in the foothills of the Mourne mountains and draws its main ingredient from  the local water supplied from the reservoir, making this an unfiltered craft Irish Stout. With a body of roasted barley and oats with accompanying light chocolate flavours, this makes a nice change from the usual stout we tend to return to drinking this time of the year.


5. Michael Collins

Using a whiskey substitute instead of gin in the classic Tom Collins adds a little more winter depth and results in the refreshing and fruity Michael Collins. If making it at home, shake a good Irish whiskey, fresh lemon juice, sugar and strain into a glass. Add ice cubes, carbonated water and stir. The festive season rolls around and many of us fill with cheer. If the time does come to break out the bubbles this year, why not try one from a small, virtually unknown Champagne house who make some outstanding wines. Their style is akin to some of the more famous ( and expensive) Grand Marque Houses. A blend of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, this is a wonderfully rich and biscuity Champagne.


7. Craigies Dalliance Cider

Lover of wine but not a fan of cider? The folks at Craigies have hit the nail on the head with Dalliance. Not too sweet, Dalliance is dry and made with not one but three Irish apple varieties. This light bodied cider is sure to please many this season.


 8. Cognac Cure

 A warming and comforting drink, Cognac is a perfect tipple for this time of the year. In this cocktail, the sourness of fresh lime juice mixed with the sweet taste of the honey compliments the rich taste of the Cognac. Combine with a splash of  carbonated water and top with ice. 9. Kir-Yianni Xinomavro “Ramnista”

A revelation and certainly one to enjoy during these darker days with dimmed lights. Produced from the Xinomavro grape, this Greek wine, with its hints of dark fruits, is a vinous superstar waiting to be discovered. Best described as combining the seductive qualities of Pinot with the structure of Nebbiolo.


10. Pauwel Kwak

With one of the coolest glasses out there, you might be led to thinking that this Belgian strong ale is all hat and no cattle. However, Kwak is all substance! Rich and velvety with subtle hints of caramel and spice, this is probably our top choice of winter craft brew.


11. Hot Wine Lemonade

Hot wine? Wine lemonade? Surprisingly, all of the ingredients to this winter warming cocktail do work really well together. We use a splash of Bordeaux, fresh lemon juice, sugar syrup and hot water. Don’t knock it ’til you try it, available at ely bar & brasserie, (the Chq Building), Dublin 1.


12. Domaine Alary “La Brunotte” Cairanne Côte du Rhône

A perennial favourite at ely over the years, this is a classic of its kind. Perfect for these months with its dark berry fruit, white pepper and Christmas spice, along with fantastic length. This is the type of wine that makes us happy, every time.


13. Williams Brothers Joker IPA

This nice and fruity IPA is probably one of Williams Brothers’ best. Joker IPA offers a lovely  hop taste along with fresh and light citrus notes. Not to be mistaken for a summer beer, this easy-going, drinkable IPA can be enjoyed right into the winter months.


14. Winter Berry Cosmo

Autumn brought the best of the seasonal berries and we don’t know about you but there’s only so much jam we can enjoy! We’re taking those frozen berries and putting them to use for the winter months. For a Winter Berry Cosmo, include the berries in with the usual mix of vodka, fresh cranberry & lime juice and orange liqueur or fine blend the berries as a delicious replacement for the cranberry juice.


15. Les Hauts de Montforts Minervois

Predominantly made from old vine Grenache, this is full-bodied perfect red for the winter months. With woody herbs, dark fruit and soft tannins this is the wine of choice for sitting by the fire.

The lead up to the festive season can be chilly, wet, dull and grey. Some have Halloween, pumpkins and dressing up to look forward to, while others might decide to have a dry November in anticipation of the busy festive season ahead, or take up a hobby they mightn’t have had time for during the summer months. There are plenty of amazing things happening in Dublin in the weeks leading up to December, so we’ve put together 15 for your bucket list.

There are a million and one things going on for this year’s Bram Stoker Festival, we reckon you won’t need to do anything else for the rest of the month after it! From vamp-wiring (yes, that’s city centre zip lining) to sinister screenings, gothic markets, karaoke to to all things ghoulish for the kids, there’s something for every man, woman, child and vampire this 24 – 27 October.

2. A Photo Speaks A Thousand Words

3. Art Comes Alive

NGI Plays presents sixteen short plays inspired by National Gallery paintings on Saturday 22 November and 29 November 2014. Sixteen 10-minute plays inspired by paintings in the National Gallery of Ireland have been created, over two years, by five Irish playwrights and will be beautifully performed by actors from the Umbrella Theatre company.

4.  Book It In

5. Run Dublin, Run

6. Explore The Unknown Rhône

Rhône Wine Week Ireland is a celebration of the wines of the Rhône Valley, with events all over the city, from 3 – 8 November. From Rhône dinners, Q&A’s with Rhône experts and wine makers, to the Big Rhône Quiz, there’s lots to love about this South of France wine celebration.

7.  That’ll Do Donkey, That’ll Do

Based on the hit films, Shrek The Musical promises to bring all the much-loved characters to life, live on stage, in an “all-singing, all-dancing extravaganza” at the Bord Gais Energy Theatre on 21 Oct – 9 November.  The onstage version is sure to provide a lot of laughs between the green swamp-dwelling ogre and his cheeky donkey sidekick.

8.  Smashing Science

Three Smashing Science films will screen at the Chq Building on 13 – 15 November as part of science week. 9.  Let’s Dance

Think pink and dance like everybody’s watching for a fantastic cause this 29 November at the Convention Centre Dublin. Some great personalities will be partnered with supporters and survivors and this black tie event offers a fun night out, while helping a very worthy cause.

12. Run In Dublin’s Darkness

You can play your part by lighting up Dublin’s darkness and running 5k or 10k on 12 November.

Marking the 5th anniversary of the King of Pops’ passing, Anthony Walker premieres The Man In The Mirror – A live tribute to the music of Michael Jackson at the Olympia Theatre, Saturday 1 November. Tipple Tip(s) of the Week: Oktoberfest Dublin

In excitement of Oktoberfest arriving to George’s Dock (Dublin 1) this Thursday 18th, we’re getting our Bavarian dirndl dress and lederhosen together, and planning which German tipples we’ll be enjoying this week (and no, not all at the same time).

  1. Erdinger Weissbier – From one of the world’s largest wheat beer breweries and the official sponsor of this year’s Oktoberfest Dublin, is one of the most famous weissbiers. While it is fruity, what we enjoy is that it isn’t too sweet either. Light and easily drinkable, this is a great thirst quenching beer.
  2. Paulaner Hefe-Weissbier – A well balanced wheat beer, you can certainly taste the yeast and banana, without it being too overpowering. Quite sweet which compliments the light bitterness, this medium bodied Weizen is fresh and flavoursome.
  3. Krombacher Pils This German Pilsner has nearly an all grain flavour with a minimal hop taste. This is a crisp and light bodied beer, best enjoyed on a warmer Autumn’s day. Brewed with natural spring water, this provides its refreshing taste.
  4. Wagner Stempel Spätburgunder – A German Pinot Noir, from the Wagner-Stempel winery encapsulates all that is great about Pinot as a variety, and Germany as a wine producer. This softly perfumed wine is delicate but beautifully flavoured, with raspberry, cherry and redcurrant flavours.

Taste Tip of the Week: Jamaican Coffee Pecan Brownies

As the days get cooler, we step away from lighter desserts and enjoy heartwarming indulgent classics. These gorgeous brownies are heavenly served with ice-cream and also ideal for storing as treats for your coffee break – if you can resist them for that long!

What you need:

  • 400g caster sugar
  • 375g unsalted butter
  • 75g cocoa powder
  • 3 tbsp finely ground Jamaican blue mountain (or your favourite) coffee beans
  • ½ tsp salt
  • 3 large eggs
  • 1½ tsp vanilla extract
  • 150g plain flour
  • 100g pecan halves
  • 6 tbsp freshly brewed Jamaican coffee
  • 100g dark chocolate,
  • 70% cocoa solids, chopped (Valrhona is ideal)
  • 30 thin strips crystallised ginger, or candied orange peel
  • icing sugar, for dusting

Makes 15

How we do it:

  • Line a baking tray, measuring approx 38 x 26cm, with greaseproof paper, or lightly grease a glass ovenproof dish. A lasagne dish is ideal. The tray or dish should be 2cm minimum in depth.
  • Combine the sugar, butter, cocoa, ground coffee and salt in a metal or heatproof bowl.
  • Place the bowl over a saucepan of simmering water and leave until the butter melts, stirring occasionally to help blend the ingredients – the texture will be grainy.
  • Remove the bowl from the water and allow the mixture to cool to lukewarm.
  • Whisk in the eggs and vanilla
  • Sieve the flour over and fold in.
  • Take three-quarters of the pecan halves and roll up inside a clean tea towel. Bash lightly with a rolling pin to break up. Stir the pieces into the mix.
  • Pour the freshly brewed coffee over the mixture with the chocolate and stir until melted and smooth.
  • Pour the mixture into the prepared dish or tray and spread evenly.
  • Allow to cool and thicken for approximately 1 hour.
  • Preheat the oven to 180°C. Bake in the oven for 25 minutes or until a skewer inserted into the brownies comes out clean.
  • Remove from the oven and cut into squares.

Dress the brownies with the reserved pecans and ginger or candied orange peel. Dust with icing sugar. Serve warm with vanilla ice-cream.

Table Talk of the Week: What Makes Farming in The Burren So Special?

For those of you who aren’t aware, the ely organic family farm is located in the Burren, Co. Clare (refresher here). Often people have asked us why we have chosen to keep our farm there and what makes farming in the Burren so special.

The beauty of farming in the Burren, Co. Clare lies in the fact that it has been farmed in the same fashion for 6,000 – 7,000 years. This way of farming, where your animals are up on the hills in the winter months, is unique only to the Burren, Co. Clare. Due to its limestone structure, the Burren landscape acts almost as a storage heater. The land receives heat from the Atlantic drift in the summer and it stores that heat for the winter as the soil depths are so shallow. Gentle heat releases from the limestone all winter making for very little frost, and allowing the animals to be happier and warmer on the hill (also called the winterage) than in the valley. The animals then come down to the valley for the spring and summer months.

Burren Farmland.

Also unique to the Burren is the way in which land is distributed. Land in The Burren is sold, not by the area, but by the numbers of animals you keep or feed. Summer land is matched with the winter land and you always have enough winter land to maintain the animals you keep on the summer land. Many of the cattle farmers in the Burren might produce calves in the spring, feed them on the rich pastures of the valley in the summer, sell the calves in the autumn and put the cattle back up on the winterage in the winter.

Life in the Burren always works as a balance.

What to get the wine or beer lover in your life that has everything? An ely gift card of course! Joking aside, we’ve got some awesome quick and easy DIY gift ideas you can make at home. While we’ve been blessed with sunshine recently, we’ve highlighted a few of the things to do in Dublin when it rains (which it still does, quite a bit). This week’s tips, tipples and table talk also looks at the, now controversial, Poolbeg chimneys of Dublin’s skyline and we get a little bit cheesy with our how-to-guide to serving the perfect cheeseboard.

Travel Tip of the Week: What To Do in Dublin When It Rains

Good aul Irish summers eyh? While the weather has been relatively good of late, us Dubliners have certainly noticed the humidity in the air and with that, the heavy rainfall. When it rains it pours and yes, while we would always advise popping into any of our 3 ely venues, hiding out from the rain and letting us pour you a little glass of wine or craft beer, if you find yourself as a visitor to Dublin during one of these spells or just feel like enjoying your city, don’t worry. We’ve compiled a short list of awesome things to do in Dublin, come hail or high water!

  1. Visit the Little Museum of Dublin. Right in the heart of the city, this little museum is a must visit. Located on 15 St. Stephen’s Green, Dublin 2, the Little Museum of Dublin embraces and collects the fun, cute and quirky things that make this fair city brilliant. Super knowledgeable and always eager to know more, their guides tell you true Dubliner stories in a fun and informal manner.
  2. Visit the Science Gallery. With some really cool exhibitions, this is no nerdy spot! Continuously changing, challenging and altering our perception of the normal, this interactive attraction in Trinity College is always fun. The Science Gallery offers events, talks, debates and workshops, giving guests a chance to get involved.
  3. Go vintage clothes shopping. Dublin’s vintage clothing selection is always getting bigger and better and what a good way to spend a rainy day by getting lost in the days of old. Siopaella in Temple Bar, Om Diva on Drury Street and The Harlequin, 13 Castle Market are all close enough to land yourselves triple the amount of bargains in just one trip to the city.
  4. Visit the RHA Gallery. The 184th Annual exhibition runs at the RHA on Ely Place until the 17th August so plenty of time to check out some of the works at Ireland’s largest open submission exhibition. With 567 works by 354 artists, a trip to this fantastic gallery is an ideal way to while away a rainy afternoon.
  5. Relax and unwine-d at an ely wine tasting. Good company combined with wine, food and fun at an ely wine tasting is a nice relaxed yet educational way to spend a rainy evening. Held every fortnight, each with a different theme, the full list of upcoming ely wine tasting evenings can be found here.

Taste Tip of the Week: Say Cheese

“Age is of no importance, unless you are a wine or a cheese.” 

Cheese is perfect for a formal dinner party or equally, for a casual night in with friends, and needs very little preparation.

When you’re putting together a cheeseboard, try to buy where you can taste; your eyes will never tell you as much as your taste buds will. The general idea is to serve a selection of cheeses which will offer you and your guests contrasting flavours and textures.

Our ideal mix would be:

  • A nice soft cheese
  • Blue cheese
  • A hard cheese
  • A washed rind cheese (they’re the smelly ones with the pinkish rinds),
  • If possible, a sheep’s or goat’s milk cheese.

But remember, it’s better to have one ripe and gorgeous cheese than five mediocre pieces.

After you buy your cheese, be sure to look after it. Cheese is a living, breathing food and needs to be treated with some care to get the best from it. This is particularly true of the softer cheeses. Cheese should always be served at room temperature because serving it cold substantially inhibits the flavour.

Fridges aren’t as bad for cheese as they are sometimes made out to be. The main problem is their dry atmosphere rather than the cold temperature. If you do store your cheese in the fridge, always remove it several hours before serving and make sure your cheese is well wrapped in a breathable covering eg. wax paper.

There are no set rules for the serving time of your cheeses; some people like to have their cheese before dessert and others prefer it after, or instead of, dessert. It’s always good to serve something with the cheese which acts against any richness and clean the palate between cheeses. Fruit is really good for this or if you don’t have any to hand, serving with a chutney or fruit jelly will do.

Tipple Tip of the Week: DIY Gift Ideas

Do you ever struggle with what gift to get the beer or wine lover in your life? They’ve already got a whole shelf of Riedel, Tipperary or Waterford Crystal wine glasses. The over sized German beer-stein glass has had its fun. When that occasion does come around, this time why not make something yourself?

Heartfelt, personal and usually low cost and simple – As Blue Peter would say, here’s one we made earlier:

Step one, drink wine and craft beer. Not a problem? We thought so. Step two, keep and collect all the bottle caps and corks. We are trying it keep it low cost though, so another idea is to get down to any of the three ely venues (or another good bar) who would be more than happy to give you their excess bottle caps after a night’s shift. Wine corks might be that little bit more difficult to source, but a good wine bar should have a few in stock, otherwise you can buy corks in bulk for relatively low cost online.

Table Talk of the Week: The Poolbeg Chimneys – Should They Stay or Should They Go?

The suggestion from ESB that the resources needed to maintain the unused Poolbeg Chimneys could be better spent elsewhere caused some controversy among Dubliners this week. The red and white towers have stood at the Poolbeg area of Dublin Bay since the 1970s and have raised the demand that these chimneys be protected. With many, both domestic and foreign, voices saying that they are an iconic part of the Dublin skyline, others argue that the towers are an “eye sore”, agreeing that the resources to keep them there could indeed be better spent elsewhere.

This is a topic that pretty much all Dubliners will have an opinion on, there is no smoke without fire (as they say), and no doubt will be very keen to share it. At ely, we love them – those red and white striped chimneys are one of the few genuine icons of the Dublin skyline. They are the first thing you see of Dublin when you fly home, or the last bit of Dublin you see before you leave. They are like two ever-present sentries standing guard over our city. Where some might see ugly, we see a certain “industrial charm”.

ESB say that a decision would be made on the future of the Poolbeg chimneys by the end of this year [2014]. Demolition is among the options being considered.

tips, tipples & table talk – Week 6

In honour of this Friday, the 4th of July, we reviewed some un-brew-lievable (sorry) American craft beers along with one for you to enjoy in the summer sunshine, the easiest fro-yo recipe ever, in this week’s tips, tipples & table talk. We also look at 50 Shades of Grey in Ireland and no, not the book: Why you you should be visiting the uniquely stunning Burren, Co. Clare this summer.

Craft Beer(s) of the Week: Red, White and Brew  

Independence day is upon us this Friday 4th of July,  so we thought it only fitting to put our star spangled banner of approval on our favourite American craft beers. There are now over 2,700 craft breweries operating in the U.S, the highest total since the 1880s according to the Brewers Association, which made our decision a tough one, but here it goes: Our top American craft beers of the week.

  1. Anderson Valley Barney Flats Oatmeal Stout – Which is the stout that us Irish folks love to drink? Just can’t quite think of the name right now but it is because of our love for this stout that makes it difficult for others to get a look in. However, this Californian stout is seriously interesting with a thick, rich and full body along with hints of chocolate and coffee. When the waiter offers us the dessert menu, we simply say we’ll have another one of these.
  2. Brooklyn Lager – Some might argue that, hang on, this isn’t really a craft beer anymore but that’s where some might respond that hey, this is the original craft beer… of New York anyway. According to Brooklyn Brewery, Brooklyn Lager is New York’s “hometown” beer, brewed to a pre-Prohibition recipe that dates back to the days when Brooklyn was the brewing capital of the East Coast. Light bodied, this craft beer is easy, drinkable and can be enjoyed at any time of the year.
  3. Flying Dog Doggie Style Classic Pale Ale – The team at ely are huge fans of the Flying Dog Brewery and their classic pale ale is still one of our favourite craft beers out there. Fantastic summer drinking, its floral citrus aroma runs all the way through and can also be found in its well balanced taste. 5 out of 5, wonderful stuff!
  4. Kentucky Bourbon Barrel Ale – This beer from the folks at Lexing Brewing Co. (Alltech) is a whopping 8% but what we like about it is that it’s surprisingly drinkable and smooth, despite its high alcohol volume. True to its name, you can certainly taste the bourbon but it’s accompanied by a lovely, nutty oak taste along with dark fruits, figs perhaps. Not a beer for a big night out but for a relaxing, much like the beer, well balanced evening.

Taste tip of the Week: Frozen Yoghurt Berry Cup

Fresh, fruity and good for you – this quick ‘n’ easy frozen treat offers delicious and guilt-free indulgence this Summer.

What you need:

  • 200g mixed nuts (e.g. pecans, walnuts, almonds)
  • 500g mixed berries (fresh or frozen) plus a few fresh berries to serve
  • 500g organic plain yogurt, chilled
  • 2 tbsp good quality honey
  • mint leaves, to serve

How we do it:

  • Toast the nuts by placing in a frying pan over a medium heat and tossing until golden brown – take care not to burn.
  • Put three-quarters of the fruit in a food processor and blend for 30 seconds.
  • Add the yogurt and honey and blend for 1 minute until smooth.
  • Taste for sweetness and add more honey if necessary.
  • Layer the yogurt with the remaining berries in tall glasses, bowls or cups and freeze for a minimum of 2 hours.
  • To serve, top with toasted nuts and some mint leaves.

Travel tip of the Week: The Burren, Co. Clare

“The Burren? Sure that’s only rock, there’s nothing there!”

We still remember when we first advised one of our overseas customers to go and visit The Burren, Co. Clare during their round trip of Ireland, and the quote above that somebody quipped in with. Now, while the person did have a point about the rocks (The Burren takes its name from the Irish word ‘Boíreann’, meaning a rocky place), they were wrong about the ‘only’ part. When you think of Irish landscapes, you picture every shade of green while in the Burren, you find 50 shades of grey with only a bit of green thrown in. This strange beauty is what makes the Burren so uniquely stunning and gets our recommendation for Travel tip of the Week.

The Burren, also rich with historical and archaeological sites, is an ideal location to combine a trip with the nearby Cliffs of Moher or perhaps, for a stop off along the way. Colours of the Burren change with the light, weather and season, making it a fantastic place for the many artists who visit to set up their easels for the day.

Summer has officially arrived in Ireland and not a moment too soon (we were getting worried there for a few weeks). From World Cup wines, BBQ craft beers to the perfect picnic snack – hopefully this week’s tips, tipples & table talk will have you sorted for the sunny weather. Enjoy it while it lasts folks!

Wine World Cup: Group B – Spain v Chile – KO: 20.00

Spain’s native white grape Godello goes up against the might of Chilean Chardonnay in today’s Wine World Cup play-off. Both have their strengths.

The Chilean Chardonnay has an abundance of ripe tropical fruit and wonderfully creamy palate. Spain, however, has history on its side – the first written record of Godello goes back to the 1530’s. Lean, crisp, but with a lovely peachy fruitiness. We’re going to back this one as the winner this evening – and enjoy it on the sunny terrace!

Taste tip of the Week: Summer Pesto

The perfect accompaniment to any summer picnic or lunchtime snack, our taste tip of the week is so easy to make yourself. Sure, it could be quicker to buy your own at the supermarket but trust us, homemade pesto is always worth the effort.

What you need:

  • 200g toasted pine nuts
  • 200g fresh basil leaves
  • 3 garlic cloves, roughly chopped
  • 1 tsp rock salt
  • 200ml extra virgin olive oil
  • 100g parmesan cheese, finely grated

Summer Pesto

How we do it:

  • Put the pine nuts in a small pan and heat gently, stirring continuously, until golden brown – be careful not to burn them.
  • Put the basil, pine nuts, garlic and a good pinch of salt with 200ml olive oil into a food processor until it
  • reaches a creamy consistency.
  • Add the parmesan and pulse again.
  • Serve with extra pine nuts, basil leaves and parmesan.
  • To store, spoon into a screw top jar, or preserving jar and cover with 1 tbsp oil, this will keep in the fridge for 3 days.

Stir into freshly cooked pasta for a summer salad, use as a dip, or spread over bruschetta – however you like your pesto!

Craft Beer(s) of the Week: BBQ Brews

There’s nothing like that smell of char-grilling in the air and with this heatwave we’re experiencing, we hope to smell a lot of it this week! Why not take a break from the token summer beers and ciders, that have usually been marketed with a bikini clad lady and the slogan “ice cold refreshment”, and pick up an equally refreshing craft brew. Here are our top BBQ brews of the week:

  1. Longboard island lager, Kona Brewing Co. – Light, grassy with floral hops. This one is crisp, refreshing and easy drinking. Great warm weather beer. Surf’s up!
  2. Coopers sparkling pale ale, Coopers Brewery – A good one for its versatility, it can be enjoyed in either cool or warm weather. Slight citrus flavour which for us, was quite unexpected for a pale ale. The fresh, fruity taste will satisfy any cider drinker.
  3. Hollows alcoholic ginger beer, John Hollows – Not too tangy, not too sweet – this is grown up Goldilocks’ top choice. The few real ingredients make one of the best ginger beers we’ve come across. Seriously refreshing and made from the finest ginger root, this makes for fantastic summer beer drinking.
  4. Craigies Irish Cider (Ballyhook Flyer) – What would a summer session be without at least one cider? We always love a cider with wine influences and this one has a wonderful balance between fruitiness and dryness. Its savoury qualities make it a great one to enjoy at BBQs, while still being light enough to have with food.

tips, tipples & table talk – Week 3

Fathers. For many of us at ely, these are the people who taught us how to farm (Erik & Hugh Robson on the ely family farm pictured below), how to cook, how to pull our first pint, how to taste our first pint, to walk us down the aisle and to hold our hands through the times when we were to become fathers ourselves.

To all dads, granddads, great-granddads and those who act as father figures, we thank you!

Craft Beer of the Week: Monty Python’s Holy Grail Ale

This take on the classic English Golden Ale is a great option to accompany a barbecue’d burger. The slight fruity flavours of Monty Python’s Holy Grail offer light refreshment while the caramel buttery taste surprisingly compliments beef quite well. Easy drinking for the Summertime and according to Black Sheep Brewery, our Craft Beer of the Week “has been tempered by burning witches”, so that’s always good – right?

Tip of the Week: Summer Wedding

ely’s executive head chef Ryan Stringer is getting married this weekend! For those of you who too, have an upcoming summer wedding planned, here are a few of our last minute tips from our wedding coordinator at ely bar & brasserie on the things you may have overlooked.

Umbrellas

Your summer wedding has been purposely planned for the weather to be on your side but don’t forget, this is still Ireland and she’d be a grand aul’ country if only we could roof her. Whether your venue is indoors or outdoors, you and your guests will probably have to be outside for some part of the day and may not have thought to bring  umbrellas. Always handy to stock up on a few for your guests, many stores sell relatively inexpensive ones. If there is still a shortage of umbrellas and it does rain on the day, for goodness sake, cover the bride!

Shoes

If you’ve purchased new shoes for the big day, make sure to break them in in advance. In the summer the weather is obviously warmer, sometimes even very hot, resulting in feet swelling from the heat. Throw in any anxiety or nerves you might have and trying to fit comfortably into a brand new shoe can cause serious pain and discomfort later. Nobody wants to smile through gritted teeth on the dance floor! While cold feet on the day of your wedding is never good, equally so, neither is hot feet.

Grass

If you are having a garden wedding or reception where there is lots of grass, try to ensure that the grass isn’t freshly cut on the day before, or on the day of the wedding. A few days in advance is perfect. Keep in mind that in the summer, many people can suffer from hay fever allergies and freshly cut grass can irritate those that do!

Traffic

For those planning a city summer wedding, keep in mind that the weather can play a huge part for traffic problems! If your church or wedding venue is located near the coast, keep in mind that on the rare scorcher of a sunny Irish day, all routes to the coast are usually heavily congested. Similarly, when the weather is particularly bad, traffic can also come to a standstill as drivers take particular caution on the roads. Just remember to keep an eye on the forecast (which you most likely will be doing anyway) and make sure to remind your guests to allow for plenty of sufficient travel time on the day.

The Dublin LBGTQ Pride Festival  kicks off this Sat 14th June with plenty of fun happening in the city for all. Enjoy smooth live jazz from The Cormac O’Brien Trio from 2pm this Sun 15th at ely gastro bar. Food lovers can flock to Taste of Dublin at The Iveagh Gardens, Thurs 12th – Sun 15th June and lovers of food can also get involved in Street Feast on Sun 15th June. Street feast is really a cool day of community lunches where you can get to know your neighbours, meet new friends and enjoy some good grub in the process.
