Craft beers and cocktails @ ely – Part 4

This week I was going to take a look at some of the stouts/porters. Guinness, one of the most influential and iconic brands within the vintners industry, is something we will not be discussing! We will be looking at some of the other lesser known but, IMO, far superio r stouts that appear on our list. These stouts have far more flavour and complexity in comparison to Guinness and should definitely be explored and discussed.

Ohara_stoutO Hara’s Celtic stout
4.3% abv

This stout has a robust flavour with a full bodied and smooth mouth feel.
The roast flavours lead to a dry espresso like finish. A generous addition of fuggles hops lead to a tart bitterness which mingles with the roast espresso flavours on the tongue.

Try this for a more authentic stout taste.

This beer from the Harviston brewery in the Uk is a real winner.
Probably the first “other” stout that I really appreciated. This pens its name from the consistency of the beer. Thick, rich and dense in appearance and taste, this stout has it all. Lush sweetness carries chocolate and coffee flavours to the beholder and the punchy alcohol and subtle bitterness cleans your mouth out and leaves you wanting more.

ABV 4.7%

Made in the UK by the Thwaites brewery, this is a medium bodied porter.
It has all the usual stuff that is associated with porter; coffee, liquorice and chocolate but it has a good carbonation to it, which makes it light and drinkable. I always find with this beer, that it’s best enjoyed when it begins to come to room temperature.

Definitely a beer to have in front of the fire or enjoyed while reading a book

 

 

 

OharaO hara’s Leann Follain
ABV6%

This is a double stout, which means that it has a higher percentage of alcohol and a bit more body. However, this is certainly a diferrent beer to the celtic stout that O’Hara’s brews. This is higher in alcohol and does have more body, but it’s also sweeter and far more balanced than it’s little brother. It’s like the recipe has been reduced down to be made more concentraded. This is much better enjoyed slightly below room temperature to allow it’s flavours to open up and be appreciated.

 

 

 

StPetersburgSt Petersburg Russian Imperial Stout
7.4%ABV

This is an excellent beer and excellent style of beer. There aren’t many of these around and you should always make sure to try a Russian Imperial Stout at some point. The Thornbridge brewery has become one of the most awarded brewery’s in the UK. This stout doesn’t disappoint either. It’s power may put some of you off in terms of its potency, but it actually is a flavoursome, round beer which can be good for just sipping on, but as a beer “enthusiast” this holds its own in terms of complexity.

ely wines for Summer #010 – Final part!

Here goes a recap on some of the wines we’ve featured over the last couple of weeks. I’ve attached the list of wines below- hopefully you had an opportunity to try at least some of them. If you haven’t, don’t worry- there is plenty of time left in this summer, and many of these wines are ely favourites, so they might be around into autumn.

What will I be drinking for the rest of the summer- well, in moderate quantities (obviously) and in no particular order…

German Riesling must be the ultimate summer wine, low in alcohol, crisp, fresh and with perfect fruit/acid balance. My #1 choice.

Italian whites – Italy is producing some wonderful white wines from native varieties which have far more character than you may have come to expect from Italian whites. Look out for-Pinot Bianco, Gavi, Lugana, Soave, Vermentino, Verdicchio, Falanghina, Fiano, Greco and Grillo.  And when you’ve done them, try Favorita, Erbaluce, Fruliano, Grechetto, Pecorino, Inzolia, Catarratto and Zibibbio. When you done with all of them, give me a shout and I’ll list some more!

Look east! We are finally starting to see more and more wines from Eastern Europe on our shelves, and some are mighty impressive. For whites in particular look to Slovenia, Slovakia, Croatia and Greece.

Lighter reds . Sounds obvious for summer, but where to look? Well start with the stunning Pinots from Germany and Northern Italy- there is one of each listed below.  Beaujolais may be struggling to regain the reputation it once had, but that is usually when they start making their best wines- a simple Beaujolais villages , served cool, in the garden with lunch or a light dinner makes for a perfect summer evening.

Sherry, Sherry,Sherry. Did I mention Sherry? It may still have its detractors, but its (fanatical) followers are getting louder and louder. Fino or Manzanilla, well chilled, with some straight-forward nibbles – olives, cured meats etc.  – is a match made in winey heaven.

In celebrating Bastille Day (week) we have chosen a couple of French classics for this week! We appreciate that these are at the higher end of the price spectrum, but they are an absolute treat!

Meursault ‘Les Vireuils’ Domaine Chavy-Chouet 2010

Romaric Chavy is the 7th generation of his family to run this winery. Their vineyards are evenly divided between Meursault and Puligny Montrachet with holdings in many of the finest vineyards in both. Romaric has a clear vision of the style of wines he wants to produce, with the emphasis on freshness rather than creaminess, and minerality over oak. As a result, the wines see only 25-30% new oak, and minimum battonage. The 2010 ‘Les Vireuils’ is a perfect example of his vision- the nose is subtle yet complex, with aromas of white flower and citrus. The influence of the oak only becomes apparent on the palate, not as a flavour but as texture, rounding out the lemon-fresh streak. As the wine opens, the inherent richness of Meursault becomes more apparent, but never overcomes the precision and finesse of this superb wine. Just try to drink it slowly.

With food… Go all out and have a bottle of this with the amazing seafood platter in ely Winebar. Lobster- check… Dingle Bay brown crab.. check.. Carlingford oysters, prawn cocktail, tempura squid and much more.

 

Domaine de la Janasse Chateauneuf-du-Pape 2009

Chateauneuf-du-Pape might not strike you as a summer wine, and in most cases you’d probably be right. In fact, it’s a wine that many of us associate with winter, or even Christmas. But that doesn’t have to be the case. While some Chateauneuf is big and burly- all power and strength – there are some which are much more refined. Janasse is one of the latter. Put simply, it reminds us of why Chateauneuf-du-Pape is held in such high esteem. A blend of 80% Grenache with 10% each of Syrah and Mourvédre, its defining characteristics are elegance, purity and concentration. There are more famous names and more expensive wines produced in this region, but none match Janasse for quality, consistency and value.

With food…. Just keep it simple. Have some organic Burren beef from our family farm. A 28 day dry-aged fillet with mushroom wellington and horseradish mash in ely Bar & Brasserie should do the trick!

Castell d’Encus Tharlan 2010

From Costers del Segre in the far north east of Spain, in the foothills of the Pyrenees, at an altitude ranging from 800-1000m, Castell d’Encus is making extraordinarily elegant wines. From the intense Ekam Riesling, the refined Cabernet based Quest to the almost Pinot like Tharlan which is in fact 100% Syrah. Grown at 1000m in cool conditions and fermented in rock vats and stainless steel and then aged in French oak, this is a very subtle and restrained Syrah.

The site was first established by monks in 1100 and since identified for its outstanding potential given the high altitude, meaning less problems of high sugar levels and low acidity in the grapes, and also better development of flavour and aromas. The Tharlan is bright and ripe, without being over the top. This is an exciting new style of Spanish red.

image“The brilliant 2010 Thalarn is a pure Syrah that is partially fermented in rock vessels and stainless steel and aged in barrel for 10 months in 70% new oak. It has an incredibly intense bouquet of small black cherries, cassis, blueberry and a touch of peppercorn that is very well-defined, but extremely primal.

The palate is medium-bodied with filigree tannins and a satin-like texture. It possesses outstanding focus and precision plus wonderful minerality and clarity towards the finish that exudes finesse, handling the new oak so that you barely notice it. This is an exceptional Syrah that should age magnificently.”

Improve your culinary skills in 2012. Our cookery school teaches essential kitchen techniques and recipes used daily in our 3 restaurants, to bring the ely experience home. Our cookery course is one with a difference: we’ll not only teach you chef skills, award winning sommelier, Ian Brosnan, will do a food and wine matching lesson each evening so you can taste the perfect wines with the evening’s dishes!

From the beginning the ethos at ely has been simple: we want to serve good quality, simple food that works well with our wine list. Focusing on using locally sourced and seasonal produce in a creative and fun way, Ryan Stringer, our Executive Head Chef, will demonstrate how to prepare and cook a 3 course meal using the best of Irish produce.  Ryan will guide you through the process from sourcing the raw ingredients, preparation, timing and presentation of your dish. So whether it’s selecting the right cut of meat and doing it justice or mastering the art of the pastry chef, ely’s cookery school has something for everyone!

ely’s 4 Week Wine Appreciation Course is great for those who love wine and would like to learn a little more. We examine how wine is made, where it comes from, why we like it and why sometimes we don’t. ely provides a fun, fresh and sociable approach to wines tasting: deciphering jargon, how to get value and the best out of a bottle.
